Gemelli with Roasted Chicken, Spinach, and Goat Cheese
Delicious recipe for roasted chicken that does not require much prep time. Also delicious if you add sautéed mushrooms or sun-dried tomatoes.
- 1 roasted chicken
- 1/4 pound spinach leaves
- 2 garlic cloves, minced
- 2 teaspoons chopped thyme
- 6 ounces goat cheese
- 1 pound gemelli pasta
- salt
- cracked black pepper
- 1/4 cup olive oil
- Cook pasta al dente' according to package directions, reserving about 3 tablespoons of the cooking water when draining.
- Place the pasta water in a large bowl. Add the spinach, garlic, thyme, olive oil and half of the goat cheese and mix well.
- Add the chicken and salt and pepper and mix well. Add the pasta and mix well. Top with remaining goat cheese and serve immediately.
